Baked Red Potatoes with Lemon and Garlic
These red potatoes are so delicious and so easy to make.  My family can't get enough of them.  You definitely need to add these to your family meals. 

Baked Red Potatoes with Lemon and Garlic

2 pounds of small red potatoes, cut into fourths
1/4 cup melted butter
2 teaspoons minced garlic
1 teaspoon salt
Juice of 1 lemon
1/4 cup (or more) finely grated Parmesan cheese

Combine the melted butter, garlic, salt and lemon juice in a small bowl and set aside.  Put potatoes in a baking dish.and pour mixture over potatoes.  Stir well to coat potatoes.  Sprinkle Parmesan cheese on top.

Bake at 350 degrees, covered, for 45 minutes.  Then uncover and bake for another 15 minutes.

Mom's Sweet Potatoes

Our favorite food at Thanksgiving (besides the turkey) is sweet potatoes--especially the way I make them. We need to call them Sweet, Sweet Potatoes. But the Sweet is what makes them so good. Here is my recipe. I can taste them now!

Mom's Sweet Potatoes

Boil 4 - 6 sweet potatoes (with skin still on) until soft when pricked with a fork--about 30 - 45 minutes. Let the sweet potatoes cool, then peel and mash in a large bowl. Skins should peel off very easily.

Add and mix in the following ingredients:
(I use a hand mixer to mix it.)
1 cup sugar
1/2 teaspoon salt
2 beaten eggs
1/3 stick of butter melted
1/2 cup milk
1 teaspoon vanilla

Put mixture in a greased 9x13 pan. Cover with mini-marshmallows. Bake at 350 for 30 minutes until marshmallows are melted and browned. Then take a spoon and mix the marshmallows into the sweet potatoes. Put more marshmallows on the top and bake again (about 20 - 30 minutes) until marshmallows are melted and browned.

By the way, can anyone tell me why my picture turned out flipped like it is. I couldn't get it turned around. Does anyone know how I can correct this problem? Thanks!

Mom's Potato Salad

My potato salad is must at your labor day celebration. Everyone raves about it and I hope you will enjoy it, too. My daughter-in-law does not like potato salad, but she loves mine--that's why it's called Mom's (rather than Nana's) Potato Salad.


Mom's Potato Salad

6 - 8 medium to large potatoes
1/4 cup chopped celery
1/4 cup chopped onion ( or more if you like onion)
3 - 4 hard boiled eggs, chopped
1 - 2 Tablespoons sweet pickle cubes
2 Tablespoons pickle juice
1/4 - 1/2 cup mayonnaise
1/2 - 1 teaspoon mustard

Peel potatoes and cut into pieces. Put in a pot of salted water and bring to a boil. Cover and cook on medium low heat for about 30 - 40 minutes. Now the first secret here is the salt. Salt the water enough so that the potatoes will have a good taste when they finish cooking. Drain and set aside to cool a little.

In a large bowl put the potatoes, eggs, celery, onion, pickles, pickle juice, mayo and mustard and mix together. The second secret is to put everything together while the potatoes are still a little warm. When the potatoes are warm they mash together a little bit and you don't have to use as much mayonnaise. Taste it and see if it needs salt. Add the salt if needed.



**My husband loves my potato salad, but he doesn't like the mayonnaise because he says it 's not healthy for him. So, we use Vegenaise with Grape Seed Oil (get it at a health food store) and it is delcious--plus it is healthier.

Our Favorite Potato Casserole

Since I already posted my grilled chicken recipe (see chicken), I now need to give you my favorite potato casserole recipe. My kids always call it "the meal"--grilled chicken and potato casserole. My butter beans (lima beans) are also included in that meal along with my Cucumber Cooler recipe (see salads). When I made the potato casserole today, I put it on the table and before I could even get a picture, it was half gone. That's how delicious it is. Enjoy!Our Favorite Potato Casserole

6-8 medium potatoes, baked ( I bake them at 350 for 1 to 1 1/2 hours)
Cool and grate.

1 /2 cup grated onion (I just grate one large onion)
1 - 2 cups grated cheese
1 teaspoon salt
Add these ingredients to the grated potatoes

1/4 cup melted butter
1 can cream of chicken soup
8oz. sour cream
Melt butter in a small bowl. Add soup and sour cream and mix well. Pour into potato mixture and mix well.
Put in a 9 x 13 pan. Bake at 350 for 45 minutes.

1 1/2 cups corn flakes, crushed
1/4 cup melted butter
Take out of oven and sprinkle topping of crushed corn flakes on top. Drizzle 1/4 cup melted butter on top. Put back in oven and bake for 15 more minutes.

**You can actually buy packaged potatoes already grated, but I always use fresh potatoes. It takes a little more time, but it is worth every bite. :-)
