Broccoli Corn Bread
1 box Jiffy corn muffin mix
4 eggs beaten
1 small onion, chopped
1 box frozen broccoli, chopped (I chopped it into very small pieces and let it thaw a little)
4 oz. (1 cup) shredded Cheddar cheese
1 stick butter, melted
1/2 cup sour cream
Mix all ingredients together in a bowl. Bake in a greased 7 x 11 inch pan at 425 degrees for 25 minutes.
